Cantinetta Antinori is a joint project by Arkady Novikov and the Italian wine house Antinori. These names promise something special. The Antinori 700-year-old family-owned wine house is one of the main characters of the Italian wine breakthrough in the 70s of the last century. The Cantinetta Antinori is a restaurant for food and wine, the children of the fertile land and generous sun of Tuscany. The interior of the restaurant brings together the house and the wine cellar, and even the landscape. Guests enter the Cantinetta Antinori through the summer veranda with wicker furniture and living trees – a place where it’s always pleasant to celebrate numerous family holidays. The main hall has light-coloured walls, dark furniture and lots of pictures – a classic of the style. The centre of attraction here is the open kitchen – a symbol of home and a place of major events. Mauro Panebyanko, the Chef de cuisine of the Cantinetta Antinori restaurant, knows for sure that cooking is a grace and gratitude to nature for its bounty. Reverence for the traditions and understanding of modernity, simplicity in design and imagination in taste– together they form the amazing combination of clarity and identity.
Chef Cantinetta Antinori
I was born October 12, 1975 in Busto Arsizio – a city in northern Italy, which is the gateway to the fashion capital - Milan. As a child I spent a lot of time in my uncle's restaurant. I remember how, at age five I helped clean tables, saw to guests and treated them with caramels.
With years, the restaurant world fascinated me more, so I chose to study to be a professional chef. I studied at the institute of hotel business in Stresa - one of Europe's most famous - and every summer as an assistant chef and confectioner practiced their skills in the various restaurants. I graduated with high marks.
My task- to give emotions our guests, offering elegant simplicity and taste. In my work, I assure you, there is always a place of love and passion.
