Gennadiy Kim has been interested in Japanese cuisine since he was a kid. After graduating he learned from the famous chef of the Okinava restaurant - Seiji Kusano. In 2004 they opened the Seiji restaurant.
Gennadiy Kim was created the menu for the first Yoko restaurant. He tried to adapt classic Japanese dishes to Russian preferences. The most interesting experiments was with sauces. He created some sause based on tofu, edamame, plum, mint and pepper.
Gennadiy Kim was the chef of the Yoko for 5 years. After that, he went traveling to study Japanese cuisine. And when he came back, he became a chef of two Yoko restaurants.
The greatest secret of the perfect Japanese dish is simple. It's fresh fish. For Yoko restaurants, fish and seafood deliver every week from the Tsukidzi market in Tokio.
