Born in 1969 in the city of Nukus, Uzbekistan.
In 1995 he moved to Moscow and was a dishwasher on the ship Valery Bryusov, where a year later he became a chef specializing in South Korean cuisine. In 1997-1998 He worked as a chef in St. Petersburg and then in South Korea. In 1999 he returned to Moscow. Here the career Vitaly Kim took a dramatic shift from the South Korean cuisine to European. In one of the capital's restaurants he studied Italian cuisine at Luigi Di Sepio. Since 2001, he heads the kitchen at the “Veranda u Dach”
He has been in The Shore House restaurant since opening.
